Red meat production in 1959 totaled 27.5 billion pounds, up 7 percent from 1958, according to the Crop Reporting Board. Beef production in 1959 was 13.6 billion pounds --up 2 percent from the 1958 production of 13.3 billion pounds. Veal production totaled 1.0 billion pounds--15 percent less than in 1958. Lamb and mutton production totaled 738 million pounds--7 percent more than a year earlier. Pork production totaled 12. 1 billion pounds--15 percent more than the 10.5 billion pounds produced in 1958. Beef accounted for 49 percent of the total red meat production in 1959, while pork made up 44 percent. Veal accounted for about 4 percent and lamb and mutton 3 percent. Lard production totaled 2. 8 billion pounds in 1959 compared with 2.4 billion pounds in 1958.

The number of cattle slaughtered in 1959 was 3 percent below 1958. Cattle slaughtered under Federal inspection was down I percent from a year earlier, other commercial slaughter declined 7 percent, but farm slaughter increased 2 percent. Calf slaughter in 1959 was down 17 percent. Slaughter of calves under Federal inspection was down 14 percent, while other commercial slaughter was down 23 percent, and farm slaughter was down 2 percent. The total number of sheep and lambs slaughtered in 1959 increased 7 percent from a year earlier. The number slaughtered under Federal inspection was up 9 percent, but other commercial slaughter decreased 3 percent, while farm slaughter increased 6 percent from one year earlier. Total number of hogs slaughtered in 1959 was 14 percent more than in 1958. Slaughter in Federally inspected plants increased 16 percent, other commercial increased 12 percent, and farm slaughter increased 7 percent.

Slaughter cattle averaged 26 pounds heavier, calves averaged 3 pounds heavier, and hogs averaged I pound heavier than in 1958. The average live weight of sheep and lambs was unchanged from 1958.

Slaughter in Federally inspected plants and other commercial plants is included in the monthly estimates. Farm slaughter estimates are on a quarterly basis only. The number of livestock slaughtered under Federal inspection is obtained from the Meat Inspection Division, Agricultural Research Service.
